Watermelon Ice Pops: A Juicy Delight for the Senses

Remember those childhood days when the ice cream truck would come around, and you would eagerly reach out for a colourful popsicle? Recreate that nostalgic experience with homemade watermelon ice pops!

Ingredients

  • 1 Watermelon 
  • 3 tablespoons of honey/jaggery powder
  • 3 tablespoons lemon juice

Step 1: Start by removing the watermelon seeds. Cut the watermelon into pieces that can fit in the blender.

Step 2: Add the watermelon pieces and lemon juice to the blender.

Step 3: Add honey or jaggery powder and blend all the ingredients until smooth.

Step 4: Strain the puree through a sieve for a smooth extract.

Step 5: Pour the puree into popsicle moulds and keep it in the refrigerator for about 3-4 hours.

Ingredients

  • 4 tablespoons rose syrup
  • 1 medium peeled, seeded and chopped watermelon 
  • 2 cups of yoghurt 
  • 2 tablespoons honey
  • 2 teaspoons lime juice

Step 1: Add watermelon, yoghurt, lemon juice, rose syrup, and honey to a blender. Blend the mixture properly. 

Step 2: Keep the smoothie in the refrigerator for about 2-3 hours.

Step 3: Serve it cold.

Watermelon Fruit Salad: A Colourful Oasis on Your Plate

Each bite of this vibrant fruit salad will awaken your taste buds and provide a refreshing escape from the relentless summer heat.

Ingredients

  • 5 cups cubed watermelon
  • 1 cubed avocado
  • 1/3 cup sliced red onions
  • 1 cup diced cucumber
  • 1/3 cup crumbled feta cheese
  • 1/3 cup torn mint or basil leaves
  • 1/2 jalapeno
  • 2 tablespoons extra virgin oil
  • 3 tablespoons lime juice
  • 1/2 cup minced garlic clove
  • 1/4 tablespoon sea salt

Step 1: Start by making the dressing for the salad. Take a mixing bowl and whisk olive oil, garlic, salt, and lime juice.

Step 2: Take a large plate and arrange watermelon, cucumber, and red onions. Drizzle your plate with the dressing you have prepared.

Step 3: Top it with feta cheese, avocado, mint, and basil leaves.

Note: You can even add peaches, berries, kiwis, or any other fruit of your choice.

Watermelon Gazpacho: A Chilled Soup Surprise

Who says watermelon is only meant for sweet treats? Expand your culinary horizons with a chilled watermelon gazpacho—a surprising twist on a classic summer soup. 

Ingredients

  • 1 Watermelon
  • 2 Cucumbers
  • 2 Red bell pepper
  • Mint and coriander
  • 2 cups chopped tomatoes
  • 2 tablespoons lemon juice 
  • 1 tablespoon olive oil
  • 2 cloves of garlic

Step 1: Blend watermelon, one tomato, one cucumber, one bell pepper, and a hint of garlic until smooth. 

Step 2: Add lime juice, olive oil, mint and coriander for that extra zing. 

Step 3: Combine the remaining bell pepper, cucumber, and jalapeno in a mixing bowl. 

Step 4: Refrigerate for at least an hour to allow the flavours to combine. If necessary, season with additional salt.

Watermelon gazpacho can be served on its own with crusty bread or with a salad or sandwich for a more substantial dinner.
