In a recent Instagram post, Yasmin posted a vibrant video and recipe with the caption, "Healthy Nacho Cravings = SOLVED. Here's how I create my guilt-free nachos that pack a punch in flavour and are packed with nutrients"

She provided the ingredients for three servings:

  • 1 large sweet potato
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Black or red beans (boiled or canned)
  • Shredded cottage cheese
  • Jalapeños

For the tomato salsa:

  • 1 chopped tomato
  • 1 tbsp finely chopped onion
  • 1 tsp lemon juice
  • Fresh coriander
  • Salt and chili flakes

For guacamole:

  • 1 ripe avocado
  • 1 tsp lemon juice
  • Optional chopped onion
  • Salt
  • Fresh coriander

The Healthy Sweet Potato Nachos Recipe

Yasmin puts it together in this way:

  • Cube the sweet potato.
  • Mix them with olive oil, salt and pepper.
  • Cook in an oven set to 175 o C (350 o F) for 15-20 minutes and they should be crispy.
  • Crispy ones can be served topped with beans, shredded cottage cheese and jalapeños.
  • Continue to bake another 5 to 10 minutes, until the cheese is browned.
  • Serve with a fresh tomato salsa and creamy guacamole on top of them.

In the video, Yasmin also stated, "You say nacho, I say dance. Let's make it healthy. Slice sweet potatoes very thin and bake them in the oven for 10-15 minutes. Spread with red beans and shredded cottage cheese and bake again for 10 minutes. Then add tomato salsa, guacamole and jalapeños and indulge in this tasty, high-protein and fibre-packed nachos meal."
