Preparation
Mix the flour, sugar, ghee and baking soda to create a texture of bread crumbs that just almost hold together. Now, add water to knead dough. Cover the dough with a damp cloth.
Take a pan and heat 1 tablespoon of ghee in it. Add the almonds, cashews and just sauté them for a few seconds. Make sure they do not turn brown. Now, add coconut, cardamom powder, and sugar, raisins, dates, saffron and ginger powder. Finally add coconut and cook on a very low flame, so that you don’t burn it. It should turn pale brown and should remain dry.
Now, take small balls of approximate similar size dough. Roll the balls into small same sized circles.
Take a tablespoon of filling and fill in the center of each circle and fold over into crescent shapes. Dip the tips of your fingers in water and press the edge tight and seal it, just like dumplings. Fill all the circles. Keep all the gujias aside.
Heat ghee in deep frying pan and fry all the gujias, till they are golden brown in color.
Now, either you can have them like this or you can dip them in sugar syrup and enhance the taste.
