South Indian Style Ladies Finger Curry

Have it boiled, have it fried, have it sliced, have it cooked, ladyfingers are nutritious, green and one of the prime vegetables offered by the Great Indian food family. Let us unfurl another recipe.   Key Ingredients: ½ teaspoon of cumin seeds (powdered), 2 tablespoon of finely grated coconut, 5-7 cashew nuts (grated), 2 teaspoons of coriander seed (powdered), 3 red chillies (broken), 1 medium sized onion (diced), 150 grams of ladies finger (cut horizontally in equal sizes), ½ teaspoon turmeric powder, salt as per taste, 4-6 curry leaves, few coriander leaves, 2 teaspoon olive oil   Sauté the coriander powder, red chillies, onion and the curry leaves in oil. Wait for it to turn into golden brown. Next, pour the ladies finger in the pan and let it simmer for a while in low flame till it softens a bit. Add grated coconut, turmeric powder, cashew nuts and salt and mix well. Add little amounts of water to dilute the thickened paste into light gravy. The cashew nuts add richness to the dish and thicken the paste making it look creamy and royale!
