How to make Kathal ki Sabzi?
Take the required ingredients, such as 300 grams raw jackfruit, three potatoes, two onions, ¼ teaspoon asafoetida, one bay leaf, four cloves of garlic, and salt.
What Else Do You Need?
One inch ginger, ¼ cup curd, one inch cinnamon stick, two black cardamom, two teaspoon coriander powder, and ½ teaspoon cumin powder.
More Ingredients
½ teaspoon garam masala powder, ½ red chilli powder, ½ cup tomato purée, one teaspoon mustard oil, salt, and coriander leaves.
Preparation
Grease your hands and knife with oil and then start cutting raw jackfruit. After cutting, put it aside in a bowl of water infused with salt so that it doesn't become brown.
Stir
Take another bowl, add curd, tomato purée, turmeric powder, red chilli powder, coriander powder, cumin powder, and garam masala powder and mix well by pouring some water.
Pressure Cooker
Take a pressure cooker, add one teaspoon of oil. Once hot, add asafoetida to it. Then add finely chopped onions, ginger and garlic, and sauté until golden brown.
Cinnamon and Cardamom
Once the onions are golden brown, add cinnamon stick and black cardamom to it and mix well.
Curd Masala
Once the spices are mixed, add the previously prepared curd masala in the cooker with tomato purée, kathal, and potatoes.
Salt
Once everything is combined, add salt as per your taste and stir well. Add one cup of water, cover the cooker and cook for 3-4 whistles. Then turn off the heat.
Garnish and Serve!
After turning off the heat, let the pressure release naturally. Once it is released, open the cooker and add coriander leaves and serve.
