5-Step Cabbage Soup Recipe to Boost Immunity in Monsoon

Ingredients

One onion, a quarter of a cabbage, two medium carrots, 2-4 garlic cloves, 3-4 cups of vegetable broth, one tablespoon of olive oil, one bay leaf, basil leaves, one teaspoon of lemon juice, salt and pepper according to taste, and butter.

Prepare cabbage

Start by thoroughly washing the cabbage leaves. Soak the cabbage in a bowl for 30 minutes to soften.

Chop vegetables

Wash and peel all the vegetables. Chop them nicely into small pieces to allow easier cooking of the soup.

Saute vegetables

Take a pan and add onions, tomatoes, and garlic. Saute them in live olive oil over medium flame for 4-5 minutes until golden brown and crispy.

Add cabbage and vegetable broth

Add the chopped cabbage and vegetable broth and cook for another 4-5 minutes. Stir it occasionally to avoid burning.

Boil the soup

Add the desired amount of water with salt, pepper, olive oil, lemon juice, and bay leaf. Let the soup simmer for about 45–50 minutes on a medium flame.

Serve hot

Turn off the flame and add butter for creaminess. Add a pinch of black pepper and serve it warm with garlic bread on the side.
