Ingredients
One cup rice, one-fourth cup urad dal, half cup yoghurt, one tsp ginger paste, one tsp green chilli paste, one tsp salt, half tsp baking soda, one tbsp lemon juice, one-fourth tsp asafoetida, water, oil, one tbsp oil, one tsp mustard seeds, one green chilli, slit, a few curries leaves, half tsp sugar.
Prepare Dhokla Batter
Grind soaked rice and urad dal into a smooth batter. Add yoghurt, ginger paste, salt, and ferment.
Add Baking Soda and Lemon Juice
Once it gets fermented, mix the baking soda and lemon juice gently to prepare the batter spongy.
Prepare Steamer
Grease a steaming tray. Add and bring water to a boil in the steamer. Ensure enough water for steaming.
Steam the Dhokla
Put batter into the tray, smooth top, and steam for 15-20 minutes. Until the toothpick comes out clean.
Tempering
Heat oil, add mustard seeds, green chillies, curry leaves, hing, water, and sugar. Put over steamed dhokla.
Serve
Allow cooling, cut dhokla into squares or diamonds, and serve with green or tamarind chutney.
