Ingredients
One and one-fourth cups brown jasmine rice, one tbsp coconut oil, one small white onion, a pinch of salt, one tbsp ginger, two cloves garlic, one red bell pepper, one yellow, orange or green bell pepper
What else do you need?
Three carrots, two tbsp Thai red curry paste, one can of regular coconut milk, half a cup water, one and a half cups of kale, one and a half tsp coconut sugar, one tbsp soy sauce, and two tsp fresh lime juice.
Cook the Rice
Take water to a boil, add rice, bring back to boil, and reduce the heat. Simmer for 30 minutes. Drain the rice, and set aside.
Mix the Vegetables
In a large skillet, add the onion, salt, ginger, garlic, bell peppers, and carrots. Then mix it until softened.
Prepare the Curry
Add the curry paste, and mix it well. Then pour in the coconut milk, water, and kale, bring to a simmer. Cook until the vegetables are tender.
Season the curry
Add the tamari, rice vinegar, and salt to taste. If you like, adjust the seasoning to add more flavour and acidity.
Serve and Garnish
Divide the rice and curry between bowls. Top with cilantro red pepper flakes and Sriracha. Serve it hot!
