Ingredients
4-5 ripe tomatoes, 8-10 garlic cloves, 1-2 green chillies, 1 tablespoon oil, one teaspoon cumin seeds, Salt, to taste, half teaspoon sugar, Fresh coriander leaves (for garnish)
Roast Tomatoes and Garlic
Heat a pan on medium heat and add the tomatoes and garlic cloves. Roast them until the tomatoes char slightly and the garlic becomes soft and golden brown.
Blend the Ingredients
Once the tomatoes and garlic are roasted, remove the skins from the tomatoes and peel the garlic. Blend them with salt, sugar, and the sautéed tempering.
Cook the Chutney
Pour the blended chutney back into the pan and cook on low heat for 5-7 minutes, allowing the flavours to mend and the chutney to thicken slightly.
