Ingredients
Take 350 grams of pasta, three cloves of garlic, two peeled and sliced beetroots, one peeled and sliced onion, and three finely chopped tomatoes.
What Else Do You Need?
One sprig of basil leaves, half cup of fresh cream, one teaspoon of red chilli powder, salt as per taste, and black pepper powder as per taste.
Preparation
Take a large pot, add water and bring it to boil. Once the water is boiled, add one teaspoon of salt to it. Preheat the oven to 180 degree celsius for later use.
Add Pasta
After adding the salt, add the pasta to the boiling water and cook for 12-15 minutes until it is al-dente (just cooked).
Drain
Once the pasta is cooked, drain the hot water and run the pasta under cold water. Then drizzle some oil on the pasta and make sure each pasta is coated with oil.
Beetroot
Take a baking sheet and grease it. Drizzle olive oil and sprinkle salt over beetroots, garlic, onions, and tomatoes, then roast them in the oven.
Roast
Roast them in the oven for 20 minutes, then continue roasting for another 15 minutes. After roasting the beetroot should’ve softened and might look cooked.
Mix
After roasting, allow them to cool. Then, blend the beetroot, fresh cream, olive oil, and half a cup of warm water in a mixer grinder until a smooth puree is formed.
Pan
Take a heavy bottomed pan, add olive oil, beetroot sauce, salt, black pepper, red chilli powder, and cooked pasta. Mix on high flame until the pasta is covered in the sauce.
Garnish and Serve
Once the pasta is covered properly in beetroot sauce, garnish with basil leaves and serve hot!
