Ingredients
300 grams of asparagus, 12 almonds, 2 medium onions, two tablespoons of butter, two tablespoons of flour, two and half cups of vegetable broth, one tablespoon of spinach puree, salt to taste and two cups of milk.
Prepare asparagus and almonds
Start by cutting and blanching the asparagus. Toss the almonds and saute them until crispy.
Saute onion and flour
Melt the butter in a pan saute onions until golden brown and crispy. Add the flour and stir it continuously.
Add vegetable broth
Now, add the two cups of vegetable broth to the onion mixture and cook it until it is lump free. Simmer for 2-3 minutes and cook it until it starts to thicken.
Add other ingredients
Now add spinach puree, milk, almonds, salt and pepper to this. Cook it on a low flame until creamy.
Serve
Garnish with chopped almonds and serve it hot with crispy breadsticks on a rainy evening.
