Ingredients
One cup of Japanese rice, one-fourth cup rice vinegar, one tablespoon of sugar, a teaspoon of salt, half a cucumber, sliced into thin strips, one sheet of nori seaweed, sesame seeds and soy sauce for garnish.
Prepare cucumbers
Slice the cucumber into thin strips. Hollow the cucumber using a spoon and remove excess moisture using a paper towel.
Season sushi rice
Add the cooked rice to a pan with vinegar, sugar, and salt. Cook it until sugar is dissolved. Let it cool down to room temperature.
Assemble the sushi
Lay the seaweed sheet and add cooked rice on it. Place cucumber slices in between and roll the sushi sheet tightly.
Garnish and serve
Garnish the sushi with sesame seeds on top. Cut the sushi roll into bite-sized shapes and serve it with soy sauce.
