Ingredients
One-third cup moong dal, one onion, one tomato, two green chillies, two brinjal small, one potato, one carrot small, one tablespoon tamarind extract, one-fourth teaspoon turmeric powder, one-eight teaspoon Asafoetida, one-fourth teaspoon jaggery, two tablespoons coriander leaves, curry leaves
What else do you need to add?
Half teaspoon jaggery, salt, one and a half tablespoons chana dal, one and a half teaspoons coriander seeds, four dry red chillies, half teaspoon fenugreek seeds, one tablespoon oil, half teaspoon mustard, one teaspoon jeera/cumin, one sprig curry leaves, one-eight teaspoon asafoetida/hing.
Cook Moong Dal & Vegetables
Take a pressure cooker, and add moong dal, potato, carrot, brinjal, and tomato with 2 cups of water. Pressure cook for 3-4 whistles. After it gets boiled, mash everything gently.
Prepare Tamarind Extract
In a container, prepare a mixture of one tablespoon of tamarind extract in one-fourth of a cup of water. Keep it aside.
Make the Sambar Masala
Take a pan, put dry roast chana dal, coriander seeds, fenugreek seeds, and dry red chillies until fragrant. Let it cool down afterwards grind it into a fine powder.
Tempering the Sambar
Take a pan and heat one tablespoon of oil. Add mustard seeds, cumin seeds, asafoetida/hing, and curry leaves. Let them splutter for a few seconds.
Combine & Cook
Now, add the mashed dal and vegetables to the tempering. Mix in the tamarind extract, jaggery, turmeric powder, sambar masala, and salt.
Garnish & Serve
Now, add water to adjust the consistency. Let it rest for 5-7 minutes. Garnish with fresh coriander leaves and serve hot with rice or idli!
