Ingredients
One cup of soaked lobia, two chopped cucumbers, one chopped onion, half a cup of chopped cabbage, three tablespoons of chopped coriander leaves, two tablespoons of olive oil, two chopped green chillies, two tablespoons of lemon juice, and black salt and chaat masala to taste.
Cook lobia
Take soaked lobia beans and add them to the pressure cooker with water and salt. Cook it for 5-6 whistles until it softens.
Drain water
Once the lobia is cooked perfectly, drain the excess water. Transfer the lobia beans to a big salad bowl.
Add chopped vegetables
Add chopped cucumber, onions, tomatoes, green chillies, and cabbage to the lobia and mix it well.
Add seasonings
Now, add black salt, chaat masala, and olive to the lobia. Toss it well to combine all the ingredients.
Garnish and serve
Garnish with freshly chopped coriander leaves. Squeeze half a lemon and serve. You can also add roasted peanuts to this for extra crunch.
