Ingredients
10-12 idlis, 2-3 green chillies, oil, one tsp red chilli powder, one tsp black peppercorn, one tsp dark soy sauce, two tbsp cornstarch, one medium onion, one medium green capsicum, 3-4 spring onion with greens, one tbsp garlic, one tbsp ginger, salt, one tsp vinegar.
Prepare the Idlis
Cut the idlis into four pieces each. Mix the red chilli powder, crushed pepper, soy sauce, and cornstarch in a bowl.
Deep Fry
Heat oil in a kadai and deep-fry till the idlis get crispy and golden-brown. Take out on paper towels to drain.
Stir-Fry Veggies
Heat oil in a wok and sauté ginger, garlic, and green chillies. Add diced onions, spring onion bulbs, and capsicum for a quick sauté.
Make Sauce
Add a bit of water, salt, and soy sauce. Stir in the cornstarch and water slurry and cook until thick.
Combine & Serve
Toss in the fried idlis, vinegar, crushed pepper, and spring onion greens. Toss well and serve hot, garnished with spring onion julienne.
