Ingredients
One cup of chopped moringa leaves, two cups of whole wheat flour (atta), one-fourth cup of gram flour (besan), one tsp of green chili, three tbsp of finely chopped onion, one tsp of grated ginger, two tbsp coriander seeds, two tsp cumin seeds, one-fourth tsp turmeric powder, Salt to taste, Water as needed, Oil or ghee for cooking.
Prepare the Dough
In a large bowl, mix whole wheat flour, gram flour, turmeric, cumin seeds, coriander seeds, green chili, ginger, and salt. Mix it well.
Add Moringa Leaves
Chop the moringa leaves and onions, then add them to the flour mixture. Gradually add water and knead to form a smooth, elastic dough.
Roll the Parathas
Divide the dough into small balls. Using a rolling pin, roll each ball into a flat, round disc of even thickness.
Cook the Parathas
Heat a tawa (griddle) and lightly grease it with ghee or oil. Cook the parathas on both sides until golden brown and crispy.
