Ingredients
Two tbsp butter, half tsp kalonji (nigella seeds), one bay leaf, one tbsp garlic chopped, two tbsp onion chopped, 15 cauliflower florets, one tbsp flour (all-purpose), three cups milk, one water, half cup of cheese grated (parmesan or cheddar).
Prepare the Base
Take a big container and melt two tablespoons of butter over medium heat. Add half tsp kalonji and bay leaf. Mix it for 1-2 minutes.
Mix Garlic and Onion
In a container, add one tbsp of chopped garlic and two tbsp of chopped onion. Cook it till it gets softened and aromatic, about 3-4 minutes.
Add Cauliflower
Add 15 cauliflower florets to the container. Mix it well. Cook for about 4-5 minutes. Wait until the cauliflower to soften slightly.
Make the Roux
Stir in one tbsp of all-purpose. Cook it for 1-2 minutes to form a mixture. It will be thickening the mixture slightly.
Add Liquid
Steadily place three cups of milk and one cup of water. To avoid lumps, mix it constantly and consistently. Let the mixture boil for 10-12 minutes till the cauliflower is tender.
Blend and Add Cheese
Now, you can remove the bay leaf and blend it till it gets smooth. Add half a cup of grated cheese (parmesan or cheddar). Add season to taste with salt and pepper. Serve it hot!
