Ingredients
500 grams ash gourd (petha), one-third cup ghee, two cups milk, a large pinch of saffron, three-fourth cups sugar, half cup grated mawa, two tbsps slivered pistachios, two tbsps slivered almonds.
What else do you need?
Two tbsps slivered cashew nuts, half tsp green cardamom powder, one tsp rose water, Silver war, blanched pistachios, dried rose petals.
Prepare the Ash Gourd
Take 500 grams of ash gourd (petha) peel and grate. Drain out the excess water from the grated petha.
Cook the Petha
In a pan, take one-fourth of the ghee. Add the grated petha, and stir it for 5-7 minutes till it softens.
Add Milk and Saffron
Put in two cups of milk. Afterwards, add a large pinch of saffron. Mix it well. Cook till the milk reduces and thickens.
Sweeten the Halwa
To the mixture add a three-fourths cup of sugar and half a cup of grated mawa. Mix it continuously till everything blends and the mixture thickens further.
Add Nuts and Flavours
To the mixture add two tablespoons each of slivered pistachios, almonds, and cashew nuts. Stir half a teaspoon of green cardamom powder and one teaspoon of rose water. Cook for 5 more minutes.
Garnish and Serve
Once the halwa is cooked. You can garnish it with silver war, blanched pistachios, and dried rose petals for a beautiful touch. Serve it hot!
