Ingredients

Take whole wheat flour, boiled and cool water, one cup of active sourdough, one and a half cups of warm water, four cups of maida (all purpose flour), and salt.

Sourdough Starter

Take a glass jar, mix half cup flour and one-fourth cup water. Cover the jar loosely with a lid and keep at room temperature.

Preparation

Check the mix for 2-6 days and throw some of it away. Add the same amount of flour and water everyday until it becomes airy, bubbly, and smelly.

Bread

Take a large mixing bowl, add one cup sourdough starter and one and a half cup water. Stir until completely dissolved.

Flour

Add four cups of flour and mix until it becomes sticky. Then let it rest for at least 30 minutes. Sprinkle some salt on it and mix with wet hands.

Ferment

After adding the salt, cover the bowl with cloth. After every 30-45 minutes, wet your hands, stretch the dough from all four sides and fold it.

Repeat

Repeat this stretching process three to four times in the span of four hours. Rest the dough until it puffs up.

Shape

Now, put the dough on a floured surface, shape it into a round ball, and let it rest for 20 minutes. Tighten it again and put it in a floured bowl.

Final Rise

For the final rise, you can either keep the dough at room temperature for 1-2 hours or cover and keep it in the fridge overnight.

Heat

After the final rise, pre-heat the oven at 230 degree celsius, keep a deep baking pot in the oven to heat it.

Bake

Carefully place the bread in the hot pot and cut a line on the top with a knife. Cover it with a lid and bake for 20 minutes.

Bake Again

Remove the lid after 20 minutes and bake again for at least 20-25 minutes until golden brown.

Cool and Eat

Once the sourdough bread is cooked, remove it from the pot, cool it for one hour and eat.
