Ingredients
Take a half medium watermelon, two cups of fresh orange juice, a pinch of salt, 1-2 cheese slices, 2-4 satay sticks, and a few parsley.
Preparation
Slice the watermelon into half inch thick discs while heating a non-stick pan.
Orange Juice
After heating the non-stick pan, pour orange juice in it, add a pinch of salt and cook till it reduces to half.
Round Pieces
Remove the seeds and scoop the watermelon out with a scooper to form round pieces.
Transfer
Once the juice has reduced to half, transfer it into a bowl and let it cool down to room temperature.
Add Watermelon
After the juice has cooled down, add the round watermelon pieces to the orange juice and let them soak properly. Keep them in the refrigerator to chill.
Cheese Slices
Cut both the cheese slices into half, i.e., 2x4. Further cut these slices into equal pieces and place them on each round watermelon piece.
Satay Sticks
Break the satay sticks into half and stick them into the watermelon making them a lollipop.
Garnish and Serve
Once the watermelon lollipop is assembled, garnish parsley on the top of cheese and serve!
