Ingredients
Take peeled and seeded 18-20 lychees, one and a half teaspoons gulkand, one teaspoon gelatin, two egg whites, two teaspoons honey, and one cup whipped cream.
What Else Do You Need ?
Chopped lychees, crushed dried rose petals for dusting, fresh mint sprigs for garnish, lychee wedges for garnish.
Preparation
Take a bowl and add one-fourth cup water in it. Add gelatin to it and let it sit aside for 10 minutes to bloom.
Blender
Take a blender, add lychees into it and blend until it forms a smooth paste. Then strain the paste in a large bowl.
Egg Whites
Take two egg white, beat them with an electric beater until it becomes soft. Then add honey as per your taste, whipped cream, and gulkand and mix well.
Gelatin
Once the gelatin has bloomed, microwave it for one minute, and allow it to cool. Then transfer the blended lychees and mix.
Mix
Once the blended lychees are mixed with gelatin, mix lychee mixture with egg mixture until combined properly. Then transfer it in a piping bag.
Pipe Mousse and Serve
Place sliced lychees in each glass and pipe the mousse over them. Garnish dried rose petals, mint sprig, and lychee wedge. Serve chilled!
