Ingredients
Take one cup maida, one cup corn flour, one cup unsalted butter, one-fourth teaspoon baking powder and baking soda, and two cups buttermilk.
What Else Do You Need?
Take one fourth cup sugar, three tablespoons lemon zest, two juiced lemons, one and a half cup icing sugar, and two tablespoon lemon juice.
Preparation
Preheat an oven at 180 degree celsius, grease a load tin with butter, and dust it with flour for later use.
Mix
Take a mixing bowl, sift corn flour and maida into it with baking soda and baking powder in it.
Another Mixing bowl
Take another mixing bowl, beat sugar and butter together until it forms a light fluffy texture. Also mix lemon zest in it and keep aside for later use.
Buttermilk
Add half teaspoon lemon juice in buttermilk and stir well. After stirring, mix both flour mixture and sugar mixture into the buttermilk until combined.
Oven
pour the batter into the load tin and bake in the preheated oven for 40-50 minutes. Pass a skewer into the cake to ensure it is cooked. Cool the cake on a wire rack.
Syrup
Take a saucepan, add two juiced lemons and half cup sugar in it. Cook until the sugar dissolves. Once it dissolves, pour it over the cake while it is still hot.
Icing sugar
Slowly add lemon juice into the icing sugar and mix until you achieve a desired consistency. Pour this icing over the cake.
Sprinkle and Serve!
Once the icing is poured over the cake, sprinkle some lemon zest on it and serve!
