Ingredients
One and a half whole wheat flour, half tsp salt, one-fourth tsp black salt, three-fourths tsp asafoetida, green chilli, ginger, coriander, one tbsp coriander powder, one tsp chilli powder, half tsp turmeric, one tbsp fennel seeds, one tbsp dried mango powder, three tbsp mustard oil, pinch of kasoori methi leaves, half cup Moong Dal, oil, water.
Soak moong dal
Soak moong dal for two hours and then boil until soft. Now, drain excess water and keep aside to cool.
In a mixing bowl
Take a mixing bowl and combine all the ingredients like flour, salt, black salt, and water. Now, knead to form a soft and smooth dough.
Heat mustard oil
Heat the mustard oil. Add ginger, green chilli, and all the spices, followed by moong dal and sauté well. Stir in kasoori methi and allow to cool.
Divide the dough
Divide the dough into portions, stuff them with dal mixture, and seal them. They are then rolled flat as parathas without tearing the outer dough layer.
Cook and serve
Cook each paratha on a hot tawa with oil until both sides turn golden and slightly crisp.
