Simple And Healthy Doodhi Ka Halwa Recipe For All Occasions

Doodhi Halwa, also known as Lauki ka halwa or Bottlegourd Pudding, is a traditional, healthy Indian dessert made out of grated bottle gourd and is both nutritious and delicious. Here is a simple recipe to make it at home.

Ingredients

One peeled and grated bottle gourd, one cup milk, one cup sugar, one-fourth cup ghee, one-fourth cup cashews, one teaspoon raisins, and one pinch saffron strands.

Heat Pan

Take a heavy-bottomed pan, add two teaspoons of ghee, and heat it over medium flame. Add the grated bottle gourd and sauté for 4-5 minutes until it softens.

Pour Milk

When it softens, add milk and sugar, and stir well. Let it simmer on low flame for 15-20 minutes until the milk reduces and thickens.

Saffron

Add saffron strands to the halwa, once the milk has reduced. Cook for an additional five minutes, then turn off the flame.

Sauté

Take a separate pan, add the remaining ghee and heat it on medium flame. Once melted, sauté the nuts until golden brown and crispy.

Garnish and Serve

After sautéing, garnish the halwa with nuts, and your doodhi ka halwa is ready to be served. You can enjoy it hot or cold, as desired.
