Ingredients
One tsp butter, one bay leaf, two cloves garlic, one-inch ginger, two shallots, one and a half cups beetroot, one carrot, one tomato, salt, water, one tsp crushed pepper, cream for garnishing, mint for garnishing.
Saute Aromatics
In a pressure cooker, add butter, and the bay leaf, garlic, ginger, and shallots. Saute for a bit until slightly soft.
Cook Vegetables
You can add the beetroot, carrot, tomato, and salt, then saute for two minutes. Add water and cook under pressure for 3 to 4 whistles.
Blend Smoothly
Let the cooked mixture cool, draining and reserving the water. Next, transfer the vegetables to a blender and blend until you have a smooth paste.
Prepare Soup Base
Pour the beetroot paste into the kadai and add the drainage water, mixed. When you have done this, add water to adjust the soup to your liking.
Final Touch & Serve
Bring the soup to a boil, stir in crushed black pepper, adorn with cream and a small piece of mint at the end. Serve hot and enjoy fresh!
