Craving a tangy and spicy mango pickle? This easy homemade recipe uses raw mangoes and traditional Indian spices to deliver an irresistible pickle bursting with flavour. Check a few simple steps and enjoy a delicious batch of spicy mango pickles made right in your kitchen!
Ingredients
500 grams raw mango, half tsp turmeric powder, one tbsp salt, one-fourth split fenugreek seeds, one tsp asafoetida, four dry red chillies, three-fourth cup mustard oil, one-eight cups split mustard seeds, two tbsp salt (roasted), half cup red chilli powder, one cup vegetable oil, half cup castor oil.
Prepare the Mangoes
Rinse and dry raw mangoes before cutting the fruit into flour-sized pieces. Mix it with a pinch of turmeric powder and the salt and set it aside.
Dry Roast the Spices
Next, dry roast the fenugreek seeds mustard seeds, and dried red chillies over medium heat until fragrant. Then grind them until coarsely ground.
Mix the Spice Blend
In a large mixing bowl, add the pieces of raw mango, the roasted spice mix, the red chilli powder, and the asafoetida. Mix well until fully combined.
Heat the Oil
Heat mustard oil in pan, vegetable oil, and castor oil up to the smoking point. Turn off the heat and allow the oil to cool down completely. Pour into the mixing bowl.
Store and Ferment
Pour the entire contents into a clean glass jar. Place the jar outside in direct sunlight for 3-4 days and shake the jar once a day.
