Ingredients
100 grams green chillies, eight drops lemon juice, salt, half cup of mustard oil, one tbsp Rai (mustard seeds), one tbsp sauf (fennel seeds), one tbsp dhania, half tbsp jeera (cumin seeds), one tbsp Methi dana (fenugreek seeds), half tbsp haldi (turmeric powder).
Prepare the Green Chillies
Wash, dry, and slit green chillies lengthwise. Ensure that they remain attached at the stem for easy stuffing.
Dry Roast the Spices
In a pan fry/roast mustard seeds, fennel, coriander, cumin, fenugreek, and turmeric together. Roast until it's fragrant, afterwards allow to cool.
Grind the Spices Grind the cooled roasted spices into a coarse powder using a mortar and pestle or grinder for added texture.
Heat the Mustard Oil
In a pan heat the mustard oil till it starts smoking. Let it cool moderately before using it. Mix and Store
Mix and Store
Mix green chillies, ground spices, salt, lemon juice, and cooled mustard oil. Stir it well. store it in an airtight jar.
