Ingredients
Take six ripe mangoes, one kilogram curd or yoghurt, 50 grams sugar, two pinch saffron strands, and one-fourth cup finely chopped pistachios.
Preparation
Peel and chop all the mangoes. Make a purée of three mangoes only. Keep the other three mangoes for later use.
Hung Curd
Take a muslin cloth and place it over the strainer. Now put the strainer over a deep bowl and pour the curd on the cloth.
Tie the Cloth
Once the curd is poured onto the cloth, loosely tie the cloth's edges and keep it aside for some hours so that the extra water drains out.
Mixing Bowl
Once all the water drains out, make sure you are left with creamy hung curd. Now place this curd into a large mixing bowl.
Powdered Sugar
Take a blender, add sugar, two saffron strands and blend properly.
Mix
Once the powdered sugar is ready, add it to the hung curd while also adding mango puree to it. Mix well until it becomes creamy.
Refrigerate and Serve!
Refrigerate the Amrakhand for a couple of hours and serve it by garnishing crushed pistachios and chopped mangoes.
