Ingredients
One chopped beetroot, half a cup of grated coconut, 2-3 green chillies, a teaspoon of tamarind pulp, two tablespoons of roasted gram, half an inch of ginger, half a teaspoon of salt, half a teaspoon of oil, half a teaspoon of mustard seeds, one dry red chilli, 6-8 curry leaves, and a teaspoon of oil.
Prepare beetroot
Peel and chop the beetroot into small pieces. Heat oil in a pan and saute beetroot in it for 2-3 minutes until it turns soft.
Blend Ingredients
Take a mixer and add cooked beetroot, coconut, green chillies, tamarind, roasted gram, ginger and salt. Blend it together into a smooth paste.
Prepare the tempering
Now, heat oil in a pan and add mustard seeds, curry leaves, and dry red chilli. Cook it until it starts to sputter.
Add tempering
Now, pour the prepared tempering over the blended beetroot chutney. Cook the chutney for a minute and add salt.
Serve
Transfer the chutney to a bowl and squeeze some lemon juice. Serve it as a side dish with paranthas, rice, dosas, idlis and vadas.
