Ingredients
Two and a half litres of full cream milk, 2-3 tablespoons of lemon juice or vinegar, two cups of grated palm jaggery (nolen sugar), half a tablespoon of ghee, and 20 raisins.
Curdle the milk
Take a pot and add milk and boil it. Add lemon juice or vinegar while it is boiling to separate whey and chena (cottage cheese).
Separate chena
Use a cheesecloth to add the cena to it. Squeeze to remove all the way from chena and hang it for 30 minutes.
Add jaggery
Take a big bowl and add separated chena and jaggery powder to it. Combine it using a masher.
Cook mixture
Take and pan add the chena mixture to it. Cook it on a low flame for 5-7 minutes until it starts to thicken.
Shape
Grease your hands with ghee and shape the sandesh mixture . Garnish it with raisins on top.
