Why millet poha?
Millet is packed with fibre and protein, which helps keep you full for longer and aids digestion. It is easy and light on the stomach.
Ingredients
For this, you need one and a half cups of millet poha, one small onion, two tablespoons of oil, a teaspoon of cumin seeds, 8-10 curry leaves, 1-2 green chillies, half a cup of peanuts, two tablespoons of coriander leaves, half a lemon, a teaspoon of turmeric, and salt to taste.
Soak poha
Start by thoroughly washing the poha and soak it for 30 minutes until soft and fluffy. Drain the excess water.
Roast peanuts
Heat oil in a pan and add curry leaves, cumin seeds, and peanuts. Let them sizzle for a few minutes and roast until golden brown.
Saute vegetables with spices
In the same pan add chopped onion, green chillies, turmeric powder, and salt. Saute it for one minute.
Cook poha
Add the soaked in the pan and toast them with vegetables and spices. Cook it on a low flame for 5-7 minutes.
Garinish and serve
Once the poha is cooked, squeeze half a lemon and garnish with coriander leaves on top. Add the roasted peanut for extra crunch.
