Ingredients
One cup of millet, one tablespoon of ghee, one tablespoon of mustard seeds, one tablespoon of cumin seeds, one tablespoon of urad dal, one tablespoon of channa dal, 1-2 green chillies, one-inch of ginger, one onion, 8-10 curry leaves, one chopped carrot, half a cup of peas, and two cups of water.
Prepare millet
Start by thoroughly washing millet. Dry roast the millet in a pan on a medium flame for 3-4 minutes.
Prepare tempering
Heat some ghee in a pan and add mustard seeds, curry leaves, channa dal, urad dal, and cumin seeds. Cook them until they start to sputter.
Saute vegetables
Now, add chopped carrot, green chillies, onion, ginger, and peas. Stir fry the vegetables for 1-2 minutes on a medium flame.
Cook poha
Add two cups of water with a pinch of salt in a pan and let it boil. Now, add the roasted millet in it and cook for 10–12 minutes on a low flame.
Serve poha
Add the fried vegetables and prepared tempering and cook for another minute. Garnish it with fresh coriander leaves and serve.
