Ingredients
One cup of rolled gluten free oats, one tablespoon of oil, two tablespoons of peanuts, half a teaspoon of mustard seeds, 7-8 curry leaves, one-fourth cup chopped onion and tomato, a pinch of turmeric, half a teaspoon of chilli powder, salt and pepper to taste and lemon juice.
Prepare oats
Take gluten free rolled oats and wash them under running water for a minute. Drain the excess water and keep it aside
Temper the spices
Heat oil in a pan and add mustard seeds, cumin seeds, curry leaves, green chillies and hing. Cook until it starts to sputter.
Add veggies
Now, and chopped tomatoes, onions, potatoes, and carrots. Saute them 2-3 minutes until soft and tender.
Assemble oats poha
Add the drained oats with turmeric powder, salt and some lemon juice. Combine and let it cool for 2-3 minutes.
Garnish and serve
Top it off with fresh coriander leaves and roasted peanuts on top. Serve it hot with ketchup or green chutney.
