Ingredients
One cup of peanuts, 1-2 cups of water for soaking, one-third cup water for pressure cooking, half a teaspoon of salt, one tablespoon of oil or ghee, a teaspoon of mustard seeds, a teaspoon of urad dal, a pinch of hing, 1-2 dried red chilli, a few curry leaves, an inch of ginger, and three tablespoons of grated coconut.
Soak peanuts
Soak one cup of peanuts in water for two hours. Drain the excess water and transfer it to a pressure cooker with water. Cook it for two whistles until peanuts are softened.
Saute spices
Heat oil in a pan and add mustard seeds, hing, curry leaves, red chillies, and ginger. Saute and cook them until it starts to sputter.
Add peanuts
Now, add the boiled peanuts, grated coconut, and salt. Stir it well to combine and saute it for two minutes.
Garnish and serve
Garnish the peanut sundal with chopped coriander leaves on top. Toss it well to mix, and serve with evening tea or coffee.
