Ingredients
Two cups of water, one cup of white peas (matar), a teaspoon of cumin seeds, salt, two chopped tomatoes, two chopped green chillies, one chopped potato, a pinch of hing (asafoetida), one tablespoon of oil, one chopped onion, lemon juice, half a teaspoon of garam masala, a teaspoon of red chilli powder, and one tablespoon of coriander leaves, imli-date chutney, and curd
Soak matar
Wash and soak matar for at least 6-7 hours overnight. Add matar along with a teaspoon of salt, half a teaspoon of hing, and two cups of water in the pressure cooker. Cook for 4-5 whistles.
Chop vegetables
Finely chop tomatoes, onions, green chillies, potatoes, chillies, garlic, ginger, and coriander leaves.
Roast the spices
Heat the oil in a pan and add cumin seeds, hing, garam masala, red chilli powder, and salt. Cook for 1-2 minutes.
Assemble the chaat
Now, add the matar, roasted spices, and chopped vegetables. Add the imli-date chutney, and curd and mix it well.
Garnish
Drizzle some lemon juice on the chaat. Garnish the matar chaat with coriander leaves and chaat masala on top. Toss it well and pair it with kulcha on the side.
