Ingredients
One cup of pearl barley, two medium-sized beetroots, one large onion, two medium tomatoes, 2-4 garlic cloves, one bay leaf, 3-4 cups of vegetable broth, one tablespoon of olive oil, one teaspoon of lemon juice, salt and pepper according to taste, and butter.
Prepare barley
Start by thoroughly washing the pearly barley. Soak the barley in a bowl for 30 minutes to soften.
Chop vegetables
Wash and peel all the vegetables. Chop them nicely into small pieces to allow easier cooking of the soup.
Saute onions and tomatoes
Take a pan and add onions, tomatoes, and garlic. Saute them over medium flame for 4-5 until golden brown.
Add beetroots
Add the grated beetroot and vegetable broth and cook for another 4-5 minutes. Stir it occasionally to avoid burning.
Boil the soup
Add the desired amount of water with salt, pepper, olive oil, lemon juice, and bay leaf. Let the soup simmer for about 45–50 minutes on a medium flame.
Serve hot
Turn off the flame and add butter for creaminess. Add a pinch of black pepper and serve it warm with a garlic bread on side.
