Ingredients
200 grams of raw turmeric, half a cup of mustard oil, two tablespoons of salt, half a teaspoon of red chilli powder, two teaspoons of methi seeds, three-fourth teaspoon of ginger powder, a pinch of hing, and one-third cup of lemon juice.
Prepare turmeric
Start by thoroughly washing and peeling the raw turmeric. Grate the turmeric into thin zest and keep it aside.
Coat spices
Add the grated turmeric into a big mixing bowl. Add salt, red chilli powder, methi seeds, ginger powder, hing, and salt to this. Evenly coat the turmeric with spices.
Add oil
Heat mustard oil with fenugreek and methi seeds until it starts to sputter. Let this cool down and pour over spices with lemon juice.
Transfer and store
Transfer the achar into a clean glass jar. Keep this in the sun for 3-4 days for achar to ferment and pair it with paratha or roti.
