INGREDIENTS
To follow this recipe, you will need only six ingredients: two cups of grated carrots, one cut of grated coconut, 1/2 cup of condensed milk, two tablespoons of ghee, half a tablespoon of cardamom powder, and chopped nuts for garnishing.
GRATE CARROT
Take fresh carrots and wash them with water. Now, grate the carrots with the help of a grater. Make sure you grate two cups of carrots.
GRATE COCONUT
Take coconut and grate it with the help of a grater and make sure you grate one cup of coconut.
COOK
Now, put two teaspoons of Desi ghee in a pan and keep it on a medium flame for one minute. Then add the grated carrots to the pan.
ADD GRATED COCONUT
Cook grated carrots for 10–15 minutes or until they are semi-cooked, then add one cup of grated coconut to the pan, mix them well and cook for 10 minutes.
ADD CONDENSED MILK
Then, add 1/2 cup of condensed milk to the pan, stirring well. Cook until it thickens and begins to pull away from the sides of the pan.
ADD CARDAMOM POWDER
Add 1/2 teaspoon of cardamom powder for flavour. Mix them well. Cool the mixture slightly.
SHAPE LADDU
When it becomes cool enough to handle, shape the mixture into small laddu or round balls.
GARNISH
Finally, garnish your nutritious carrot and coconut laddu with nuts and dried fruits.
