Ingredients
One large onion, one tablespoon of olive oil, two tablespoons of butter, four minced garlic cloves, two cups of fresh tomatoes, one and a half cups of carrots, one and a half cups of fresh vegetables of your choice, salt and pepper to taste, and some parsley.
Saute onions
Take a pan and add onions with olive oil. Saute the onions on a low flame until it turns golden brown.
Add herbs
Add garlic, bay leaf, and spices and sauté it for another minute to enhance the flavour.
Add tomatoes
Now, add the tomatoes and broth to the pan and cook it on low heat for 15 minutes. Let it simmer and come to a boil.
Blend the mixture
Add the cooked mixture to a blender. Blend it until it has turned smooth and creamy.
Boil the soup
Strain the blended mixture and boil the soup. Add fresh cream or butter to it.
Garnish
Garnish and serve the soup after adding fresh parsley and crunchy bread crumbs.
