Ingredients
Two-thirds cup of amla, three raw turmeric roots, one tablespoon of yellow mustard seeds, 1-2 green chillies, one and a half litres of water, and rock salt to taste.
Cut and peel amla
Start by cutting amla pieces, slicing green chillies and grating the raw turmeric into small pieces.
Grind mustard seeds
Take a mortar and pestle and add yellow mustard seeds to it. Grind it into a coarse powder.
Combine ingredients
Combine the sliced amla pieces, grated raw ginger, sliced green chillies, mustard seed powder, salt and water in a big ceramic pot or jar.
Ferment kanji
Stir it well to combine ingredients, then cover it with a lid or loose muslin cloth. Keep this in the sun for 3-4 days to ferment.
Serve kanji
Refrigerate this and serve it chilled or instantly with some ice cubes. Add some coriander leaves and lime juice to enhance the flavour.
