Ingredients
Half a kg of curd, half a kg of pahari kakhdi (cucumber), 3-4 green chillies, two teaspoons of mustard seeds, half a teaspoon of turmeric powder, half a teaspoon of cumin powder, 2-3 garlic cloves, a teaspoon of coriander leaves, and half a teaspoon of rock salt.
Blend spices
Take a mortar and pestle and add mustard seeds, green chillies, and garlic cloves. Blend them into a smooth paste.
Prepare cucumber
Peel the cucumber and then grate the cucumber into thin shreds. Now, squeeze the grated cucumber to extract the extra juice.
Add spices
Whisk dahi (curd, yoghurt), until smooth. Now, add turmeric powder, red chilli powder, cumin powder, and rock salt. Stir it well.
Assemble raita
Now, add the blended spice paste, grated cucumber, and coriander leaves. Combine it well and mix the ingredients.
Garnish and serve
Garnish the raita with some mint leaves and mustard oil on top. Pair the raita with paratha for a delicious summer lunch.
