Ingredients
Two cups of rice, half cup urad dal, half a teaspoon of fenugreek (methi) seeds, one cup of water, half a cup of sesame seeds, 6-7 garlic cloves, 5-6 red chillies, two small onions, one tomato, salt and lemon juice to taste, one tablespoon of oil, 4-5 curry leaves, one cup of pumpkin, half a teaspoon of coriander leaves, turmeric powder, and half a cup of grated coconut.
Prepare dosa batter
Soak rice, urad dal, methi seeds in water for few hours. Grind the ingredients into smooth batter and add water as required. Let the batter ferment for 1-2 hours.
Prepare til chutney
Dry roast sesame seeds, red chillies, garlic, and onion until fragrant. Grind the roasted ingredients with salt, lemon juice, and water into a smooth paste.
Prepare pumpkin chutney
Saute garlic, pumpkin, curry leaves, chana dal, red chillies, onion, and tomato in oil. Add turmeric powder, corinder powder, coconut, salt, and water. Blend this into smooth gravy.
Cook appe
Heat the pan and grease it with oil or butter. Pour the batter inside and cook the appe from both sides until golden brown and crisp.
Inject til chutney
Once the appe are cooked inject til chutney inside using a piping bag. You can also cut them in half and spread the til chutney.
Serve
Spread and layer pumpkin chutney on a plate and arrange appe on it. Serve it with sambhar on the side.
