Ingredients for filling
Two cups of boiled noodles, one tablespoon of oil, one chopped onion, one cup of chopped vegetables (capsicum, green onion, cabbage, carrots), two garlic cloves, two tablespoons of soy sauce, a teaspoon of vinegar, one tablespoon of chilli sauce, and salt to taste.

Two cups of all-purpose flour (maida), 2-3 tablespoons of oil, a teaspoon of salt, water, oil for frying, and one tablespoon of cornflour mixed with two tablespoons of water.

Mix maida, oil, water, and salt to knead a soft dough. Cover the dough with a muslin cloth and rest it for 15-20 minutes.
Saute Veggies

Add sauces and noodles
Now, add the boiled noodles, soy sauce, chilli sauce and vinegar to the veggies. Combine it well and cook it again for 1-2 minutes.
Assemble samosa
Now, flatten the dough like roti and shape into halves like a cone. Fill the prepared noodles and seal the edges with cornflour slurry.
Fry and serve
Heat oil in a pan and fry the samosa until golden brown and crispy. Serve them hot with mint chutney and chai.
