Prepare the Masala Base
Stir curd, red chilli powder, turmeric, coriander powder, and salt in a bowl. Keep it aside for later use.
Mix the Aromatics
Heat ghee, add ginger-garlic paste, green chillies, and coriander stems.mix it well. Cook until fragrant and slightly golden brown.
Fry the Eggs
Prick-boiled eggs with a fork. Fry them in ghee until golden brown. Remove from pan and set them aside carefully.
Cook the Masala
Add the curd mixture and fried onions to the same pan. Mix it consistently till the oil separates. The masala thickens properly.
Simmer the Curry
Place hot water, add rose water, and kewra water, and mix well. Add fried eggs, and cover. Cook on low flame.
Garnish & Serve
Sprinkle fresh coriander leaves. Afterwards, garnish it with a coriander sprig. Serve hot with roti, rice, or paratha. Enjoy your meal!
