Ingredients
Two cups of curd, one-fourth cup of peeled beetroot, 8-10 mint leaves, one inch of ginger, three green chillies, one tablespoon of cumin powder, half a cup of water, salt to taste, half a teaspoon of chaat masala, half a tablespoon of black mustard seeds, one tablespoon of oil, and 10 curry leaves.
Prepare beetroot
Start by thoroughly washing and peeling the beetroot. Cut the beetroot into small pieces and cook it by adding two cups of water.
Blend puree
Take a mixer and add cooked beetroot with ginger, mint leaves, and green chillies. Blend it into a smooth puree.
Prepare buttermilk
Take a bowl and add curd, water, cumin powder, and salt. Whisk it well to combine everything. Add beetroot puree and churn to mix everything together.
Prepare tempering
Heat oil in a pan and add mustard seeds and curry leaves. Add this on top of the prepared buttermilk.
Garnish
Garnish the buttermilk with mint leaves and refrigerate it for a few hours. Enjoy it chilled.
