Ingredients
Three tsp oil, half tsp jeera, half tsp coriander seeds, half tsp saunf, pinch hing, one chilli, half tsp ginger paste, two onion, one-fourth tsp chilli powder, one-fourth tsp turmeric
What else do you need?
Half tsp garam masala, one-fourth tsp amchur, one-fourth tsp sugar, half tsp salt, one-fourth cup besan, two tbsp coriander, two cups maida, one tbsp rava, half tsp salt, two tbsp ghee, water, oil.
Prepare the filling
In a pan, heat the oil. Add cumin, coriander seeds, fennel, and a pinch of hing. Stir for a minute. Add chopped chilli, ginger paste, and onions. Cook it till it gets soft.
Spice it up
Add chilli powder, turmeric, garam masala, amchur, sugar, and salt. Mix it well. Add besan. Cook until the mixture gets thickened. Stir in coriander and set aside to cool.
Prepare the dough
To prepare a mixture, you need to mix maida, rava, salt, and ghee. Ultimately, add water and knead into a smooth dough. Let it rest for 15 minutes.
Shape the Kachori
You need to divide the dough into small balls. Flatten each ball into a small disc. Afterwards, place a spoonful of the onion filling in the centre. Pinch the edges to seal and form a ball.
Heat oil for frying
In a deep-frying pan, take oil and heat over medium heat. After it gets heated, gently add the prepared kachoris. Fry until crispy and golden brown.
Serve hot
Use paper towels to drain any excess oil after taking the kachoris out of the oil. Serve hot, along with chutney or yoghurt.
