Ingredients
2 cups fresh paneer (chenna), 1/2 cup powdered sugar, 1 tsp cardamom powder, 1 tbsp saffron strands (soaked in warm milk), A few drops of green food colour (or fresh spinach juice), 1/2 tsp rose water or kewra essence (optional), Pistachio slivers for garnish
Prepare Chenna (Paneer)
Boil milk and curdle it with lemon juice or vinegar. Drain and press the chenna to remove excess water.
Make the Sandesh
Dough Knead the chenna with powdered sugar and cardamom powder until smooth and soft, creating a dough-like texture.
Divide the Dough
Divide the dough into three equal portions. Leave one portion plain, colour the second with saffron milk, and the third with spinach juice or green food colour.
Shape the Sandesh
Flatten each coloured dough portion into thin layers. Stack them to form an atri-colour effect, then cut them into desired shapes.
Garnish and Serve
Garnish the Sandesh with pistachio slivers and optional rose water or kewra essence. Serve chilled after refrigerating for 30 minutes.
