Ingredients
One cup of beetroot, one cup of paneer, one onion, one tomato, 2-3 green chillies, one cup of sooji, 4-5 curry leaves, salt to taste, one cup of water, one cup of curd, a teaspoon of turmeric, two tablespoons of coriander leaves, a teaspoon of mustard seeds, and 1-2 tablespoons of coconut oil or ghee.
Prepare beetroot
Start by peeling and chopping the beetroot into small cubes. Blend the beetroot with water into a smooth puree.
Prepare batter
Combine suji, rice flour, salt and water in a bowl. Make a runny batter and leave for 3-4 hours to ferment.
Add vegetables
Now, add chopped onions, green chillies and coriander leaves to the mixture and combine it well.
Prepare paneer stuffing
Heat oil in a pan and add chopped onion, chopped tomato, salt, pepper, mashed paneer and lemon juice. Cook this for 4-5 minutes.
Cook dosa
Grease the pan with ghee and pour two ladles of batter. Spread it evenly in a thin circle. Cook it from both sides until golden brown and crispy.
Serve dosa
Once the dosa is cooked, fold it in half. Serve with prepared paneer stuffing, coconut chutney and sambhar on the side.
