Ingredients
4-5 ripe tomatoes, 1 onion, a teaspoon of cumin seeds, a teaspoon ginger-garlic paste, half a teaspoon turmeric powder, half a teaspoon red chilli powder, half a teaspoon coriander powder, salt to taste, fresh coriander leaves for garnish, two tablespoons of oil for cooking, a pinch of hing (asafoetida), and 1-2 tablespoons of sugar.
Prepare tomatoes
Start by thoroughly washing and peeling the tomatoes. Chop them finely with onions into small pieces.
Prep to temper
Heat oil in a pan and add cumin seeds, mustard seeds, and curry leaves. Cook it until it starts to sputter.
Saute onions and tomatoes
Now, add chopped onion to the pan. Saute the onions over medium heat until they turn golden brown. ‘
Add spices
Add red chilli powder, salt, hing, turmeric powder, coriander powder, and sugar. Cook this until tomatoes become soft and mushy.
Garnish
Garnish the sabzi with fresh coriander leaves and ghee. Pair this with hot rice or roti on the side.
