Instant Samak Rice Dosa Recipe For Navratri Fasting

Why samak rice?

Samak Rice or Barnyard millet is gluten-free grain consumed usually during fast. It is packed with fibre and easy to digest than regular rice.

Ingredients

One cup of samak rice (baryarant millet), one-fourth cup of sabudana (sago pearls), half a cup of yoghurt (curd, dahi), one cup boiled potato, rock salt to taste, 1-2 green chillies, half a teaspoon of cumin seeds, water as required, and 2-3 tablespoons of ghee or oil for cooking.

Roast rice flour

Dry roast samak rice flour in a pan for a few minutes and add sabudana to it. Roast the sabudana with it for one minute. Cool it down to room temperature.

Prepare dosa batter

Add roasted flour, salt, curd, boiled potatoes and water in a mixer. Grind it into a smooth batter and leave for 10-20 minutes to ferment.

Add spices

Now, add cumin seeds, black pepper powder, green chilli, grated ginger, and fresh coriander leaves to batter. Stir it well to combine.

Prepare potato stuffing

Heat oil in a pan and add cumin seeds, curry leaves, boiled potatoes, salt, pepper, cumin powder, and lemon juice. Cook this for 4-5 minutes.

Cook dosa

Grease the pan with ghee and pour two ladles of batter. Spread it evenly in a thin circle. Cook it from both sides until golden brown and crispy.

Serve dosa

Once the dosa is cooked, fold it in half. Garnish with some onions and serve with prepared potato stuffing, coconut chutney and sambhar on the side.
